Gringo's Guide to Mexican Food:
Tortilla	A traditional Mexican thin round, unleavened Bread
Burrito	A filled, rolled tortilla
Enchilada	A soft tortilla, stuffed with different fillings, topped with sauce and cheese and baked
Chimichanga	A tortilla rolled around a filling and deep fried
Fajitas	A popular Tex-Mex dish which you construct yourself from a sizzling platter of chicken or beef strips, onions and bell peppers. Wrap them in a soft tortilla, add guacamole, sour cream or chilli sauce to your taste.
Refried Beans	Cooked beans, refried with onion, garlic and spices and mashed together
Salsaroja (red chilli sauce)	Tomatoes, garlic, onions and chillies
Sauce Picante	Tomato based sauce, with garlic, paprika and herbs
Enchilada Sauce	Sweet red peppers, tomatoes, garlic and herbs
